First-time visitors to Bangkok find a vibrant city that not only never sleep but also never stop eating . Noodles stands line of streets , serving hot food around the clock , while restaurants are rarely more than a few paces apart. One reason given for this preoccupation with food is that Thais prefer to eat little and often  rather indulge in large Western-Style meals twice a day.

Rice and noodles are the staple diet, introduced from China more than 1000 years ago'. There are 2 kind of rice : the popular " sticky " variety and boiled Kao Suay , which is sometime jasmine flavored .

Sticky rice is eaten with curries and sauces , while Kao Suay is normally served as a side dish or stir-fried with meat or vegetables .

Sticky rice is also a component of a delicious dessert  : sliced mango and sticky rice  soaked in coconut milk .

The coconut milk used to thicken curries and sauces is not sweet juice of a ripe coconut  ( that's served complete with the coconut , like an exotic cocktail ), but is obtained from the crushed  white flash  of the fruit. It was first developed by French chefs in Ayutthaya at the 17th century , where they shunned the watery sauces  and curries prepared by local cooks .

The apple supply of wood in Thailand resulted in an early development of grilling techniques , while a flourishing ceramic tradition provided pots for preparing the curries and soups . Herbs gathered from the forest , chilies and other spices grown domestically added  the distinctly Thai character and flavor.
