It was first developed by French chefs in Ayutthaya at the 17th century , where they shunned the watery sauces and curries prepared by local cooks . The apple supply of wood in Thailand resulted in an early development of grilling techniques , while a flourishing ceramic tradition provided pots for preparing the curries and soups . Herbs gathered from the forest , chilies and other spices grown domestically added the distinctly Thai character and flavor.
